Meal Prep Doesn’t Need a Prep Day

Last week, we talked about keeping meal prep simple. Choose one thing you know you'll use, prepare it, and then get on with your week.

Now, here's something else I want to offer to you because I know it will help: meal prep doesn't need to happen on a designated meal prep day.

Some of the most useful prep can happen while you're already in the kitchen - anytime! If you're peeling carrots for supper, peel a few more and put them in the fridge. If you're boiling eggs, boil the dozen. If you're cooking rice or quinoa, make enough to give yourself another option later in the week for a side or the base of a powerbowl.

You're already doing the work and this is such a good hack. Taking an extra few minutes now can make another meal easier without adding a separate job to your week.

And don't forget this little gem from the summer travel newsletters: meal prep starts at the grocery store.

Look at what you're buying and ask yourself, “What can I buy today that removes a step later?”

  • Washed greens instead of a head of lettuce
  • Cherry tomatoes or mini cucumbers that can go straight into lunches
  • A rotisserie chicken that can become supper tonight and something different tomorrow
  • A bagged salad beside it can mean supper is essentially done.

Yes, it's lovely to cook and spend time nourishing yourself. But there isn't extra credit for doing every step yourself. The goal is to have good food available in a way that works for your actual life.

This week, notice the little opportunities to make something easier for later. Prep a little extra while you're already doing it, or let the grocery store take a step off your plate.
