When it's too hot to cook... try this

One of the things I love most about seasonal eating is that it gives us permission to adapt. We don't have to prepare meals the same way all year long. As the weather changes, our kitchens can change with it. The days are longer, the garden is growing, weekends fill up quickly, and most of us would rather be outside than standing over a hot stove.

That doesn't mean nourishing yourself has to take a back seat.

Instead of fighting the feeling, I let the season guide the way I eat. Over on Instagram & Facebook, I just posted a reveal of my weekly vegetable haul, complete with meal ideas (Hot tip: It's lettuce wrap season).

This is the time of year I lean on simple, fresh meals that don't require much cooking or thinking—big salads, wraps, grain bowls, smoothies, seasonal fruit, and easy make-ahead meals that are ready when life gets busy. With a little prep, healthy eating can actually feel easier in the summer.

Over the next few weeks, we'll be sharing practical ideas to help you keep meals simple, fresh, and nourishing when it's simply too hot to cook. We'll talk about meals that come together quickly, refreshing ingredients, make-ahead options, and practical ways to keep the kitchen cool without sacrificing good food.
