With cooking, spinach should be added towards the end of the cook time. It takes very little heat to prepare it, plus it protects the nutrients. Chopped very small, spinach can almost disappear into a dish as it wilts. It's the perfect, easy addition to stews, soups, chilis, pasta sauces, lasagnas, casseroles, and many slow cooker meals. It makes a great salad base or addition. As the main green - spinach salad with strawberries and goat cheese - yum! Or mix it in with your romaine or leaf lettuce for texture and colour variety.
